Last week, Nick and I made some delicious flatbread pizzas for dinner. I want to share it with you all.
We went to Whole Foods and got some yummy flatbread and the ingredients of our choice. I’ll list what we used below, but obviously if you aren’t an idiot you already know what YOU like on YOUR pizza and can do your own thing.
Half-assed recipe follows:
- 1 can Organic 365 Spicy Diced Tomatoes
- 1 bag of Whole Foods shredded Montery Jack cheese
- 1 red Bell Pepper
- Baby Spinach
- 1 White Onion, chopped
- 1 bag Quorn fake chicken cutlets
Throw the fake chicken in a pan with a dab of olive oil and saute it with the onion till it is heated through. If you like it spicy, throw some cayenne powder in with it – the Quorn stuff takes spices really well. Set all that shit aside. VERY lightly butter (I use Earth Balance buttery spread made from olive oil) both sides of the flatbread and gently toast it very quickly in a small skillet, just enough to heat it and make it, you know, toasty on the outsides.
When you’re ready to make your pizzas, throw the spicy diced tomatoes on (it’s chunky and perfect) and spread it over the flatbread; then, top your pizza with all the stuff you want. Don’t be afraid to pile it high – the flatbread can handle it.
Cover a baking pan with foil and put your pizza(s) in the oven at 375 until the cheese starts looking bubbly and golden on top. Let it sit for at least 5 minutes after you take it out.
You should end up with a yummy, crispy flatbread crust pizza. If you didn’t then you’re an idiot, because I did it the first time I tried and I was just winging it.
